Recently, Jeff and I decided to dedicate 30 days to taking care of ourselves by taking a look at what we eat every day. While there’s a million different ‘plans’ out there, we were drawn towards a simple, whole-foods approach and have been hearing a lot online and off about Whole30 lately.
If you haven’t heard of it, Whole30 is a 30 day commitment to cutting some foods out with the goal of cutting cravings, getting some energy back and figuring out which foods are big nasty monsters for you (hello, Ben & Jerry’s… how YOU doing? Oh… Coco Puffs!! What are you doing here??) So we cut dairy, grains, legumes, sugar & alcohol.
We’ve been doing lots of looking around for new recipes! Here’s something we loved – a delicious Ginger-Lime-Coconut sauce we swiped from our friend Courtney. This is meant as a sauce for roasted chicken, but we think it makes an amazing salad dressing as well!
Here’s what you need…
- 1 can coconut milk
- 2 tablespoons peeled/chopped ginger
- 2 tablespoons lime juice
- 1 cup cilantro
- 1 cup onion
Simple, right? We have a magic bullet, so I used that to blend everything together – I had to do it in two bunches.
